Don’t we love a short list of simple ingredients, especially when we crave delicious cookies and we want them NOW!
Almond flour is basically finely ground almonds.
You can use both almond flour and almond meal to make those cookies. The difference is, almond flour is made from bleached, peeled almonds; while almond meal is made by grinding whole almonds with skin.
Using almond flour will result in smoother texture and pretty, light colored cookies. If you go for an almond meal your cookies will not be as pretty, but nutritional values will be better.
Almond flour has more calories and fat, while almond meal has more protein and fiber. The differences are not huge, but worth mentioning.

If you don’t have almond flour you can substitute it 1:1 with all purpose flour, but it will result in a bit different cookies when it comes to taste and nutrition profile.
Both smooth and crunchy peanut butter will work great in Almond Flour Peanut Butter Cookies. I really like those crunchy bits of almonds in cookies. What’s important is that you use natural peanut butter without unnecessary additions like oils or stabilizers.
You will get best results with thinner creamy peanut butter that’s easier to mix with the rest of ingredients.

How To Make Almond Flour Peanut Butter Cookies
COMBINE WET INGREDIENTS
Start by combining peanut butter and maple syrup together. This way you will make sure they will be well mixed before you make the cookie dough.
MIX THE DOUGH
Add almond flour to wet ingredients and mix with the spoon until you have a thick, uniform dough.
Scoop a heaped teaspoon of the dough. Shape a ball and roll it between the palms of your hands. Place ready balls on the cookie sheet lined with baking parchment paper. Leave some space in between.
Once all the balls are ready, flatten them with the back of the fork creating a cute crisscross pattern. The dough is a bit sticky, so you can keep the cookie in place with your fingers.
Shaping the cookies as you want them to look like is quite important as those almond flour cookies DO NOT spread and flatten while baking. They will stay more or less the same size and shape that you give them.
If you want, place a few dark chocolate chips on the top of the cookies.
Place the baking tray in a preheated oven and bake cookies at 180°C / 355°F for 10-12 minutes. Watch them last couple of minutes, so the edges don’t burn. It really takes a minute or two too much.
The cookies should look a little undercooked when you take them out of the oven. They will have light golden brown color.
Don’t move the cookies from the baking sheet yet, as they are very soft. Wait for at least 5 minutes. After they cool down a little they will be solid enough to move them to the cooling rack.
