Don’t we love a short list of simple ingredients, especially when we crave delicious cookies and we want them NOW!

ALMOND FLOUR

Almond flour is basically finely ground almonds. 

You can use both almond flour and almond meal to make those cookies. The difference is, almond flour is made from bleached, peeled almonds; while almond meal is made by grinding whole almonds with skin.

Using almond flour will result in smoother texture and pretty, light colored cookies. If you go for an almond meal your cookies will not be as pretty, but nutritional values will be better. 

Almond flour has more calories and fat, while almond meal has more protein and fiber. The differences are not huge, but worth mentioning. 

Did you know that almonds are the healthiest of all the nuts?

If you don’t have almond flour you can substitute it 1:1 with all purpose flour, but it will result in a bit different cookies when it comes to taste and nutrition profile.

PEANUT BUTTER

Both smooth and crunchy peanut butter will work great in Almond Flour Peanut Butter Cookies. I really like those crunchy bits of almonds in cookies. What’s important is that you use natural peanut butter without unnecessary additions like oils or stabilizers. 

You will get best results with thinner creamy peanut butter that’s easier to mix with the rest of ingredients.

MAPLE SYRUP

Don’t swap maple syrup for brown sugar or xylitol. Best substitute would be agave syrup or other liquid sweetener.

How To Make Almond Flour Peanut Butter Cookies

COMBINE WET INGREDIENTS

Start by combining peanut butter and maple syrup together. This way you will make sure they will be well mixed before you make the cookie dough.  

MIX THE DOUGH

Add almond flour to wet ingredients and mix with the spoon until you have a thick, uniform dough.

SHAPE COOKIES

Scoop a heaped teaspoon of the dough. Shape a ball and roll it between the palms of your hands. Place ready balls on the cookie sheet lined with baking parchment paper. Leave some space in between.

Once all the balls are ready, flatten them with the back of the fork creating a cute crisscross pattern. The dough is a bit sticky, so you can keep the cookie in place with your fingers.

Shaping the cookies as you want them to look like is quite important as those almond flour cookies DO NOT spread and flatten while baking. They will stay more or less the same size and shape that you give them.

If you want, place a few dark chocolate chips on the top of the cookies. 

BAKE

Place the baking tray in a preheated oven and bake cookies at 180°C / 355°F for 10-12 minutes. Watch them last couple of minutes, so the edges don’t burn. It really takes a minute or two too much. 

The cookies should look a little undercooked when you take them out of the oven. They will have light golden brown color.

Don’t move the cookies from the baking sheet yet, as they are very soft. Wait for at least 5 minutes. After they cool down a little they will be solid enough to move them to the cooling rack.

  • Dark chocolate chips
  • Coarse sea salt (sprinkle on top)

  • Chopped peanuts (sprinkle on top)

Are They Chewy Or Crispy?

Yes, those cookies are on the healthier spectrum. With almond flour and peanut butter as main ingredients, they pack a lot of protein and fiber.

Let’s remember that those are still cookies and the main ingredients are nuts, so they contain considerable amount of fats, although it is a good fat.

Can You Eat Them Raw?

What’s so great about this recipe is that you can eat this dough raw. If you’re not bothered with baking – just shape the balls, roll them in desiccated coconut or chopped nuts and you get scrumptious cookie dough balls

How To Store Almond Flour Peanut Butter Cookies?

You can store cookies in an airtight container or cookie jar at room temperature for a couple of days. No need to refrigerate them, but it won’t hurt.

  • 1 cup almond flour

  • 1/2 cup peanut butter

  • 1/3 cup maple syrup

  • Optional Additions
  • Dark chocolate chips

  • Coarse salt

Directions

  • In a large mixing bowl combine peanut butter with maple syrup.
  • Add almond flour and mix it in with a spoon to create thick dough.
  • Scoop heaped teaspoon of the dough and roll the balls between palms of your hands. Place them on a cookie sheet lined with parchment paper.
  • Flatten each ball using a fork creating a crisscross pattern. 
  • Bake cookies at 180°C / 355°F for 10 minutes.
  • Take cookies out of the oven and wait 5 minutes before transferring them to the cooling rack.

Notes

  • PRO TIP – watch the cookies last 1-2 minutes not to burn the edges. They should look a little underbaked as you take them out of the oven. They will be soft, but will settle once they reach room temperature.
  • Shaping the cookies is important, as those cookies will NOT spread while baking. You cannot leave them as balls, like you do with other cookies. You need to flatten and give them the shape.
