VEGAN BUTTERMILK
To make this smoothie extra creamy and add a little tang we will use vegan buttermilk instead of regular plant based milk. Buttermilk is actually made using vegan milk and lemon juice and it is ready in less than 5 minutes. Read this post to learn more about benefits and uses of vegan buttermilk.
SOY MILK works best if you want to obtain thick buttermilk, but you can use other plant milk if you have soy allergy.
LEMON juice will be used to curdle the milk and add a little tang to otherwise sweet ingredients. Not to mention all the health benefits, like boosting immune system and helping with weight loss.

OPTIONAL ADDITIONS
SWEETENER – If you like very sweet smoothies you can add maple of agave syrup. I noticed, if using ripe banana, I usually find smoothie sweet enough.

Ingredients
1 banana
1/2 cup blueberries (can be frozen)
2-3 tbsp rolled oats
- Vegan Buttermilk
1 cup soy milk (I used vanilla soy milk)
2 tbsp fresh lemon juice
- Optional
1 tbsp sweetener (agave or maple syrup)
1 tbsp chia seeds (to boost protein and fiber intake)
Directions
- Make vegan buttermilk – add 2 tbsp lemon juice to 1 cup of soy milk. Mix and wait for the milk to curdle and thicken. 5 minuts should be enouth.
- Add all ingredients: chopped banana, frozen (or fresh) blueberries, oats and vegan buttermilk + optional ingredients to blender container.
- Blend until smooth and creamy.
- Serve immediately!
Notes
- You can leave the oats to soak in vegan buttermilk for few minutes if you want to soften then. They will be easier to blend, especially if your blender isn’t that powerful.

How To Serve Blueberry Banana Smoothie?
The most important is – immediately. This smoothie is best served right after blending for a creamy, smooth texture. After a while it becomes thicker and jelly-like because of pectin in berries.

How To Make Blueberry Banana Smoothie?
Prepare Vegan Buttermilk
Measure one cup of soy milk and mix it with 2 table spoons of lemon juice. Make sure to avoid pits. Wait for the buttermilk to thicken. It should take maximum five minutes.

Add Remaining Ingredients
Peel and cut banana, measure berries and oats. Prepare all optional ingredients if using any.
Blend All Ingredients
Add all ingredients to the blender container. You can also use tall jar and immersion blender. Blend everything until smooth and creamy. Because of oats you may want to blend it a little longer than other smoothies, if you want that extra creamy texture.

Can I store Banana Blueberry Smoothie?
Because of blueberries, this smoothie is best when consumed right after blending. I do not recommend storing it for more than one hour. Blueberries are packed with pectin, that will eventually turn the smoothie into a jelly if you don’t drink it soon.
Can I Make Banana Blueberry nIce Cream?
Yes. This recipe is perfect also for ice cream. Use frozen berries and frozen bananas and half the amount of vegan buttermilk to make amazing vegan ice cream. You can freeze them for up to half an hour after blending for a firmer ice cream texture.
Can I Use Other Milk To Prepare Vegan Buttermilk?

Can I Use Other Berries?
Sure, you can use Strawberries, Raspberries or Blackberries. They will all work fine in this recipe. It’s best to use frozen berries.
