Creamy Broccoli Almond Soup – Instant Pot + Stove Top

Creamy, delicious and elegant Broccoli Almond Soup is easy and quick to prepare. It has a velvety texture and very subtle flavor of broccoli, garlic and spices.

We use whole broccoli together with stems, so extra points for the zero-waste approach.

I love a good bowl of creamy soup full of vegetables and fragrant spices. Almond Broccoli Soup is silky, garlicky and wholesome. Paired with a slice of good bread it’s a perfect dinner for chilly weather days. It’s also elegant enough to serve it to your guests.

Simple Vegan Broccoli Almond Soup 

Key Ingredients 


Use the whole vegetable including broccoli florets and the stalk. It has a lot of flavor and nutrients, so let’s not miss out on it by tossing it away.

You can use fresh broccoli or frozen. I prefer to go with the fresh, but if it’s not in the season, go ahead and use the frozen one.

Broccoli is low in calories, contains almost no fat, but packs a lot of important nutrients. It is a great source of vitamins K, C and fiber. It’s also considered a great source of iron.

Whole unblanched almonds.

If you have blanched almonds, with the skin already removed that’s also fine. Less work!

Almonds are rich in vitamin E, B2 and Magnesium. They are also excellent source of healthy fats.


I like to add potatoes to all creamy soups, as it improves the texture a lot making the soup really creamy. 


You can use  white or yellow onion.

When it comes to garlic – don’t be shy. If you like it, you can even double the amount in the recipe.

To sauté onion and garlic. You can use vegetable oil instead. 


Good quality vegetable broth will round the flavors. You can also use water.


  • Italian seasoning

  • Sweet paprika 
  • Salt and ground black pepper

How To Make Broccoli Almond Soup In Instant Pot


Place whole almonds in a cup and carefully pour boiling water to cover all of them. Wait for 10 minutes and rinse them with cold water. The skin should become wrinkled and loose.

Now, squeezing the almonds between your finders remove the skin.

Chop onions and potato, mince garlic.

Dice broccoli stem getting rid of thicker parts. Divide florets into smaller pieces.


Heat the oil up in an instant pot on the lowest ‘Sauté’ setting. Fry onion and garlic for 1-2 minutes. 

Deglaze bottom of the pot with broth. Add all remaining ingredients and close the pressure cooker lid. Secure the pressure valve and set Pressure Cooking to 5 minutes.

Use a quick release to get rid of the pressure in the pot. Blend the soup with an immersion blender or transfer it carefully to the mixer jar (if it’s ok for hot foods).

How To Make It On Stove Top

Follow step 1 and 2 from the section above.


In a large soup pot fry chopped onions until translucent on a medium heat. After a minute add minced garlic and keep frying for 1-2 more minutes. Add potato, broccoli stems and saute for 2-3 minutes in a covered pot (you may need to add a little water or broth).

Add all remaining ingredients (apart from garnish) and cook for 15 minutes on medium heat. After that time, check if the potato and broccoli stalk are soft. 

Save a few broccoli florets for decoration if you want. 

Blend with a hand blender until you get the desired consistency of the soup.

How To Serve The Soup?

Serve this delicious soup garnished with roasted almonds and nutritional yeast, with a hearty slice of crusty bread. Garlic bread or bruschetta will also do nicely.

Other Add-Ins:

  • Fresh herbs: cilantro, parsley or basil
  • Splash of lemon juice mixed into the soup
  • Dollop of vegan cream on top

How To Store Almond Broccoli Soup?

You can store it for 3 days in the fridge in an airtight container or in the covered pot.

The soup may thicken quite a lot next day, so if you want you can stir in some water or vegetable broth.

  • 1 onion

  • 3 garlic cloves

  • 1 potato

  • 1 whole broccoli

  • 1/2 cup almonds (whole)

  • 5 cups vegetable broth or water

  • Spices
  • 2 tsp Italian seasoning

  • 2 tsp salt

  • ¼ tsp sweet paprika

  • ¼ tsp turmeric

  • Freshly ground black pepper

  • Optional Ingredients
  • 1 tbsp nutritional yeast

  • 1 tbsp roasted almonds

  • 1 tsp chopped cilantro or parsley


  • Blanch almonds with hot water. Keep them submerged for 10 minutes, rinse with cold water and remove the skin.
  • Chop vegetables.
  • In a large soup pot fry chopped onion and garlic until translucent.
  • Add potato and broccoli stalks and sauté in a covered pot for another 2 minutes (add a bit of water or vegetable stock if necessary).
  • Add all remaining ingredients and cook on medium heat until all vegetables are soft. 
  • Blend the soup with immersion blender until you get desired texture.
