There are many cookie dough recipes online, but knowing all the benefits of this one you can just forget about the others.
First of all – super healthy ingredients like chickpeas, oats and peanut butter!
This Vegan Cookie Dough does not require addition of fats like vegan butter, because chickpeas and peanut butter are responsible for rich and creamy consistency.
This recipe is so much faster than others. No need to heat treat flour, as oats can be eaten raw. No risk of getting ill, as this recipe is 100% egg-free and flour-free. Just blend and mix ingredients and enjoy your sweet healthy treat. Totally fuss-free!
What do we need to make this fantastic healthy Vegan Cookie Dough?
There are few important basic ingredients and there are few that can be swapped to some extend. As with every cookie dough, there are many additions that could improve this recipe according to what you like.

CHICKPEAS
Chickpeas are the basis of the recipe and they are the reason the dough is creamy.
If you’re not addicted to chickpeas yet, like I am, you will be after trying this cookie dough. Garbanzo beans are not only super-duper nutritious, filling and tasty. They are so versatile you can eat them in salads, make bread spreads (hummus!) or burgers, add them to soups and of course use them in desserts. Not to mention chickpea brine – aquafaba, which is like a magic ingredient of vegan cooking and baking.
Did I mention they are fantastic source of plant based protein and fiber?
OAT FLAKES
Fine oats types, like instant oats or rolled oats, are the best for this cookie dough. We need to blend them to resemble flour, so the finer they are the faster you will blend them.
Btw, oats are another super food hero in this recipe.

SWEETENER
Ok, we are not making hummus, we need some sweetener to get a delicious, sweet cookie dough. Maple syrup, agave syrup or anything similar will do great.
PEANUT BUTTER
I use smooth peanut butter in Chickpea Cookie Dough, but don’t let having crunchy peanut butter in your pantry stop you from trying. I’m sure it will work just great. Be sure to use good quality butter with only peanuts as ingredients (some peanut butters have even up to 10% oils added).
If you are allergic to peanuts, almond butter (or any good nut butter) is a great substitute. If you like taste of Halva you may want to try using tahini (sesame paste).
DAIRY FREE CHOCOLATE CHIPS
If you don’t have dairy free chocolate chips or chunks you can use chopped chocolate. This is a classic addition to cookie dough, but you can get creative and go for chopped roasted nuts, raisins or colorful candy sprinkle instead.

Ingredients
1 cup cooked chickpeas (canned or from the jar)
1/2 cup oats
3 heaped tbsp peanut butter
1/3 – 1/2 cup maple syrup
1 tsp vanilla extract
pinch of salt (optional)
1/2 cup dairy free chocolate chips
Directions
- Place oats in food processor and blend them in order to get oat flour. You can blend it very finely for a super smooth dough, or leave it more rough for some crunchy bits.
In the meantime drain chickpeas, leaving aquafaba for other recipes. - Take the oat flour out of food processor and place all the other ingredients, except chocolate chips, in.
- Blend until well combined and smooth.
- At this point you can adjust sweetness. Start with 1/4 cup of maple syrup, taste and add more if you like your dough sweeter.
- Add oat flour and mix until you get smooth dough.
- Take the chickpea dough out of the food processor and mix the chocolate chips in.
- If you want to shape it into balls or scoop with ice cream spoon, let it sit in the fridge for 20-30 minutes.

HOW TO SERVE VEGAN COOKIE DOUGH
With spoon straight from the bowl, duhh!
But not only that..
You can shape your Chickpea Dough into bite size power balls for easy snacking. Roll them in cocoa, shredded coconut or colorful candies.

How To Make Chickpea Cookie Dough?
BLEND OATS
We want to blend oats separately before we add any other ingredients in order to make oat flour. For super smooth dough blend oats for at least one minute and make sure the flour is very fine.
I sometimes like to leave it a little rough for a crunchy structure of the dough.

MIX INGREDIENTS UNTIL SMOOTH
Now it’s time to mix chickpeas, maple syrup, peanut butter, vanilla extract and salt to get smooth, cream-like consistency. Btw. If you stop there you will get delicious, sweet bread spread.

ADD OATS AND BLEND THE DOUGH
Combine the oats into the chickpea – peanut butter cream until you get dough like consistency.
If your food processor is small, or not strong enough you can do it in two batches.
MIX IN ADDITIONS
Take the dough out of the food processor and mix the chocolate chips evenly in using spatula.
PREPARE FOR SERVING
You can put the Chickpea Cookie Dough in ramekins and serve it like ice cream (or even with ice cream!).
Rolling it into power balls is a good idea if you want to serve it later on. Scoop tea spoon full of the dough and roll it between palms of your hands into cute bite size balls. You can additionally roll them in dark cocoa powder or colorful candy sprinkle.

Can I make other flavor versions of Vegan Cookie Dough?
This is classic and popular chocolate chip cookie version of edible dough. With few easy swaps we can whip up other great flavors:
- addition of chopped nuts and raisins instead of choco chips will make even healthier version of cookie dough
- Birthday party version? – add more vanilla extract and swap choco chips for colorful candy sprinkle
- Mediterranean version? – use tahini instead of peanut butter and add roasted sesame seeds instead of chocolate chips
- how about Christmas Gingerbread version? Lets add 1 tsp of cocoa and 2 tsp of gingerbread spices and swap choco chips for chopped dried prunes
Can I bake this Vegan Cookie Dough?
