Who doesn’t like the crepes? Right?
I only know two types of people. Those who like the sweet version and those who like myself prefer unsweetened ones, that you can eat with various curries, spinach, grilled vegetables and hummus. Yum!
This recipe is tested, quick and foolproof. Ideal when you are hungry but too tired for long cooking.
I made those crepes as an experiment, as I didn’t have the ingredients for the recipe I usually use. I’m really happy with the result, so I decided to share it with you.
The process of making the dough for those crepes could not be easier and quicker. Check it out 🙂
IDEAL VEGAN CREPES:
- 1/3 cup oat flakes
- 1 cup wheat flour
- 1/2 tsp salt
- pinch of baking soda
- pinch or turmeric powder
- 3/4 cup coconut milk
- 1 cup water (can be carbonated but not necessary)
Place oat flakes in a blender. Blend until they look almost like a flour. Put all other ingredients in the blender including wet ones (coconut milk and water). Blend until very smooth (you can use smoothie program if you have one or high spin). Pour the dough to the bowl and place it in a fridge for 20 minutes,so it gets thicker.
After this time you can start frying your perfect crepes. And this is when I always call my husband… because as much as I enjoy making various types of dough and as much as I love eating crepes.. I suck at frying them! I know it is easy.. I know even kids can do that.. Well, maybe so, I can’t 🙂
I only know two things about frying crepes:
- the frying pan should be very hot before you start
- you can add some grease (oil or margarine) before frying the first one
I hope you like this easy recipe for quick vegan crepes. Soon I’m going to share with you my recipe for a favorite vegetable curry that goes perfectly well with those pancakes.
Enjoy!
