You can also use almond, coconut, oat or cashew milk.


If you mix soy milk with 2 table spoons of lemon juice, you will get Vegan Buttermilk. It fits this smoothie perfectly, making it really refreshing. Lemon gives us additional boost of vitamin C.


Oats make this smoothie more thick and creamy, and far more substantial. Best choice are fine oats or rolled oats, for smoother texture with less blending.

You can soak the oats in milk, even for a short time, to make them softer and easier to blend.

The substitute for oats, to help with creamy texture, is the same amount of vegan cream cheese or vegan soy cream. Both will make this green smoothie more substantial.

Add oats and plant based milk with lemon juice into a blender container. Let them soak while you prepare other ingredients.

Wash baby spinach and apple. Core and cut it into smaller pieces, but do not peel the skin. It has a lot of vitamins and fiber.

Measure other ingredients and add them to the milk.

  • 1 1/2 cup soy milk (or other kind: soy, oat, coconut)

  • 1 large green apple

  • 1/2 cup baby spinach

  • 2 tbsp fine or rolled oats

  • 2 tbsp lemon juice

  • 1 tbsp maple syrup

  • (optional) half of ripe banana


  • Add soy milk and lemon juice to blender container, stir, add oats. Let them soak while you prepare other ingredients.
  • Chop apple, but leave the skin on.
  • Measure remaining ingredients and add everything to the blender container.
  • Blend for a minute, for the ingredients to combine and smoothie to become creamy.
  • Serve immediately!


  • PRO TIP – If you want your smoothie to be extra smooth – soak oats for at least 30 minutes. Blend your smoothie on the highest speed for at least a minute.
