Key Ingredients 

SPELT FLOUR

It’s spelt flour that makes this banana bread unique

It is a type of whole flour that is much lighter than traditional whole grain flour. Spelt is a species of wheat, actually called ‘ancient grain’. It’s been known for ages, and recently re-discovered as a healthier alternative to white flour, and fluffier alternative to whole wheat flour.

It has a decent content of fiber and protein, slightly nutty flavor and adds more taste to whatever you bake with it.

Spelt flour can be easily swapped 1:1 with all purpose wheat flour.

BANANAS 

Use really ripe bananas for the best sweet flavor and moist texture. The ones with brown dots or brown skin are the best, just make sure they are not spoiled.

PLANT MILK & LEMON JUICE

You can use any plant milk of your choice, but I like to use soy milk. It curdles and thickens nicely when you add lemon juice, creating Vegan Buttermilk, which is great ingredient in vegan baking. It makes the cake moist and 

VEGETABLE OIL 

Canola oil is a great choice, as it’s the healthiest of vegetable oils. You can use any neutral cooking oil.

SUGAR

I like to use brown sugar or demerara, for this caramel flavor. You can substitute it 1:1 with any kind of sugar. If you want to use maple syrup or other liquid sweetener you would have to add 2 tablespoons flour more.

How To Make Spelt Flour Banana Bread

MIX WET INGREDIENTS

I prefer to toss everything in the blender and quickly mix until combined. 

You can also first mash bananas with a fork in a small bowl. Add all other liquid ingredients to mashed bananas and mix together until you have a smooth pulp.

MIX DRY INGREDIENTS

In a large bowl whisk spelt flour with baking powder, baking soda and salt.

COMBINE AND BAKE

In a bowl combine wet mixture and dry ingredients, and mix with a spoon just to combine. At this point fold in any optional additions like chocolate chips, chopped nuts or cranberries. 

Place the batter in a loaf pan lined with parchment paper, decorate with nuts and slices of banana.

Bake in the oven preheated to 350°F / 180°C for 50-60 minutes. After 50 minute mark check the spelt flour banana bread with a skewer. If it comes out clean, the bread is ready.

Cool it to room temperature on a wire rack before slicing.

PRO TIPS

BANANAS

Overripe bananas are the key to success, as they produce really moist and sweet bread.

If they have dark spots or even when the whole skin is brown, they are perfect.  

DON’T OVERMIX THE BATTER

For best results, we only want to mix it enough for the wet and dry ingredients to combine. Overmixing may result in gummy and tough bread. We do not want gluten to form, like in the regular bread. After all it’s only name, banana bread is more of a cake.

How To Store Spelt Flour Banana Bread?

Up to 2 days you can store it in an airtight container on the countertop. If you’re not going to eat it in 2 days (which is unlikely, as it’s really addictive) keep it in the fridge.

What Else Can I Add?

Here are  some great ideas for add ins and decorations:

  • Cranberries or raisins
  • Chopped walnuts, pecans, hazelnuts or almonds
  • Chopped prunes or figs
  • 1 tsp of cinnamon or gingerbread spice
  • 1 tbsp cocoa powder (reduce flour by 1tbsp)
  • Peanut butter or other nut butters 
  • Chocolate Avocado Frosting

Can I Make Spelt Banana Muffins?

Sure, great idea!

Just place the batter in the muffin trays and bake for around 20 – 25 minutes at 350°F / 180°C.

Is This Banana Bread Healthy?

Thanks to spelt flour, which is a whole grain this is a healthier twist to the traditional banana bread. Wholemeal spelt flour is a great source of fiber and very ripe bananas are rich in antioxidants. You can reduce the amount of brown sugar you add (or sub it with xylitol) if you want a super healthy version.

  • Wet Ingredients
  • 1/2 cup soy milk

  • 1 tbsp Lemon juice

  • 3 bananas (very ripe)

  • 1/2 cup brown sugar

  • 1/2 cup canola oil

  • 1 tsp vanilla extract (optional)

  • Dry Ingredients
  • 2 cups spelt flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • Optional Additions
  • 1/2 cup dark chocolate chunks

  • Pecan nuts for decoration

  • Banana slices for decoration

Directions

  • Preheat oven to 350°F / 180°C.
  • Add all wet ingredients into the blender container and blend until smooth.
  • In a large bowl mix spelt flour with rising agents and salt.
  • Mix wet ingredients and dry ingredients until combined. Do not overmix. Fold in chocolate chunks or chips.
  • Line the loaf pan with parchment paper.
  • Pour the batter into the pan. Decorate with nuts and slices of banana.
  • Bake for 50-60 minutes. Check the bread with a skewer to make sure the inside of the banana bread is baked.
  • Cool on a cooling rack before slicing.
