Soft, delicate and creamy Vegan Lemon Bars seducing with fresh citrus flavor – perfect refreshing dessert.
You can prepare them in under an hour. This is a little healthier version of Lemon Bars. Instead of traditional butter crust I prepared soft oats and banana bottom. I also added cocoa, because.. why not?
Oat and banana crust was adapted from this Chocolate Chip Banana Bars that I’m sure you will like too.

Vegan Lemon Bars

Ingredients
- FOR CAKE BASE
2 small bananas (very ripe)
1 cup rolled oats
3 tbsp cocoa powder
2 tbsp maple syrup
- FOR LEMON CURD
3 cups plant based milk (I used soy unsweetened)
1 cup brown sugar
6 tbsp corn starch (or potato starch)
peel from 1 lemon (or more if you like)
3 tsp agar agar powder
1 cup lemon juice
1 tsp turmeric (optional, only for color)
- SPRINKLE
4 tbsp grated dark chocolate
Directions
- In a bowl smash bananas using fork. They should form mushy pulp. Add cocoa and maple syrup and mix.
- Add rolled oats and mix everything well.
- Spread the oat crust on a tray or oven dish lined with baking paper and bake for 25 minutes in 200°C / 390°F.
Baking dish I used is 14 x 21 cm / 5.5 x 8.25 inch. - To a pot with thick bottom add soy milk, sugar, corn starch, agar agar and orange peel (and turmeric if using). Mix everything well, so there are no starch lumps.
Put the pot on a stove (medium heat) and add lemon juice – you will see your mixture thickening a little. - Cook on medium heat for about 10 minutes until the lemon curd thickens considerably. Stir gently all the time, so that bottom doesn’t burn.
- Take your crust out of the oven and pour hot curd on top.
- Leave everything to cool down. Transfer to the fridge for the curd to thicken properly. Leave for 1-2 hours or overnight.
- Take it out of the fridge, cover with grated dark chocolate or powdered sugar. Cut into square or rectangular bars.
Notes
- It’s best to prepare this dessert one day ahead, as it is much easier to cut Lemon Bars once they rested in the fridge.

For the lemon bars topping, if you want your dessert even sweeter, you can use powdered sugar instead of grated dark chocolate.

Ingredients in Vegan Lemon Bars
FRESH LEMON JUICE
You need fresh lemons to prepare this dessert. Bottled juice just won’t do! Fresh lemon juice is the reason why those bars taste so good. Lemon zest is also important. You can add more lemon peel than in the recipe. It is quite pungent ingredient, but if you like strong citrus flavor than go ahead.

COCOA AND DARK CHOCOLATE
Cocoa in the crust adds a bit of chocolatey hint, which in my opinion works perfectly with citrus flavors (chocolate and orange is classic, isn’t is?). Grated dark chocolate on top is a perfect finish here.
AGAR AGAR
If you don’t have agar agar powder, you can still do lemon bars without it. They will be less firm and a bit harder to cut. Agar agar will also keep them firm in a warmer temperature.

How to store Vegan Lemon Bars?
You can store the bars in air tight container in the fridge for about 5 days. You can freeze them too, then pack each bar separately and unfreeze when you feel like a sweet citrus treat.
